Cast Iron Skillet Cookie

A dessert that will sit well in your stomach!


Something that really bothers me about most desserts is that they tend to cause a lot of stomach upset and heart burn, especially cookies. This recipe is definitely not perfect, but I can say that it will sit better in your stomach than most of the typical skillet cookie recipes! The ingredients also add some fiber and healthy fats to the dessert :)



The Recipe

Ingredients

  • 2 medium bananas

  • 4 tbs salted butter (melted)

  • 3/4 cup melted peanut butter

  • 2 tsp vanilla extract

  • 1/4 cup natural maple syrup

  • 1 cup oats

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 1 chia egg (1 tbs chia seeds & 7 tbs water)

Steps

  1. Preheat oven to 350 degrees F and grease a cast iron skillet.

  2. Prep the chia egg in a small dish. Add the chia seeds and water to the dish and vigorously whisk with a fork. After a few minutes of whisking the chia seeds should reach a pudding-like consistency.

  3. Next, in a large bowl mash the bananas. Add in melted butter, peanut butter, vanilla, maple syrup, and the chia egg.

  4. In a blender combine the oats, flour, and baking powder. Fold this dry mixture into the wet mixture with a spatula.

  5. Pour in some chocolate chips (however many you'd like!) and pour the dough into the skillet.

  6. Sprinkle some more chocolate chips over the skillet cookie and bake in the oven for 27-30 minutes.

  7. Let cool & enjoy!
