Coconut Oatmeal Cookies

Chewy chocolate chip cookies made with coconut flour and oats

One bowl, healthy ingredients, lots of fiber!
My family spent this weekend in our Chicago condo! Fun fact: for those of you who don't know this about me, I absolutely love Chicago! However, there weren't very many baking ingredients for me to work with at our condo, so I improvised. I was able to make these delicious cookies with just 1 bowl and 8 healthy ingredients. I would highly recommend trying them!
♡ Recipe ♡

Ingredients
1 medium banana (mashed)
1/2 cup coconut flour
3/4 cup oats
1/2 cup melted peanut butter
1/2 cup natural maple syrup
1 tsp baking powder
pinch of sea salt
Directions
Preheat oven to 350 F and grease a pan.
In a large bowl combine all the ingredients.
Next fold in coconut flakes, chocolate chips, and cinnamon.
Scoop the dough onto your pan forming small dough balls. Next lightly press the dough balls to flatten them into cookie shapes. (There should be enough dough to make about 8 cookies)
Bake the cookies for 15-17 minutes and enjoy!
