Welcome to Spooky Season! Whenever you like to whip out the pumpkin spice (whether it's early August or mid-October) I've got the perfect autumn recipe for you!


These pumpkin blondies are so thick and gooey and will give you the warm, spiced taste of autumn. My recipe is made with oat flour and plant-based ingredients that will provide some additional nutrition to a delicious fall treat!

Ingredients

  • 3/4 cup oats

  • 1 tsp pumpkin pie spice

  • 1/2 tsp cinnamon

  • 3/4 tsp baking soda

  • 1 cup pumpkin puree

  • 1 chia egg (1 tbs chia seeds & 6 tbs water)

  • 2/3 cup granulated sugar

  • 1/3 cup melted cashew butter

  • Chocolate chips

Recipe Instructions

  1. Preheat oven to 350 degrees F and line an 8x8 pan with parchment paper.

  2. In a blender or food processor combine oats, pumpkin spice, cinnamon, and baking soda.

  3. Next prep the chia egg. Add the chia seeds and water to a small dish. Stir vigorously (for a few minutes) until the chia seeds reach a pudding-like consistency.

  4. Once blended smooth, add the dry mixture to a large bowl. To this bowl add the pumpkin puree, cashew butter, sugar, and chia egg.

  5. Fold in some chocolate chips and add the batter to your pan.

  6. Bake the blondies for 40-45 minutes and enjoy!
