Oatmeal Streusel Carrot Cake

A delicious oat flour carrot cake with brown sugar streusel and cream cheese glaze

Possibly an unpopular opinion of mine:
Carrot cake is the superior cake flavor. Yes, I said what I said. I don't even like carrots on their own, but carrot cake on the other hand could be one of my favorite cake flavors. The combination of grated carrots, spices, and cream cheese create the most decadent cake. My recipe is also not your typical carrot cake. It's more of a carrot cake and a coffee cake combined. ♡ Recipe ♡
Ingredients

Streusel -
2 tbs all-purpose flour
1/2 cup brown sugar
2 tbs salted butter (softened at room temp.)
2 tsp cinnamon
Cake -
1 cup grated carrots
1/4 cup granulated sugar
1/3 cup natural maple syrup
1/4 cup oil
1 chia egg (1 tbs chia seeds & 4 tbs water)
1/3 cup coconut milk
1 cup oats
1/2 cup all-purpose flour
1 tsp cinnamon
1 tsp baking powder
Pinch of salt
Recipe
Preheat oven to 350 degrees F and line a 9x9 round pan with parchment paper.
Prep the streusel topping: In a medium bowl combine the streusel ingredients. Crumble the mixture with your fingers and spread out on a pan. (This lets the streusel set and become dry and crumbly). Set aside.
Prep the chia egg. In a small dish add the chia seeds and water. Whisk vigorously with a fork until it reaches a pudding-like consistency.
In a separate, large bowl, combine grated carrot, sugar, maple syrup, oil, coconut milk, and chia egg.
In a blender or food processor, combine oats, flour, cinnamon, salt, and baking powder.
Add the dry ingredients to the wet ingredients. Fold together with a spatula until just combined.
Add the batter evenly to the round pan. Sprinkle the streusel topping over the batter.
Bake for 30-32 minutes. Let cool completely.
Optional: add a cream cheese icing. just whisk together a few tbs melted cream cheese with powdered sugar and coconut milk.
